Carrot Cake


A Reviewed Recipe (Using All Meulaboh Ingredients)

Ingredients:

2 C flour
2 C sugar (although you really don't need this much--I recommend 1-1.5)
1 t baking powder
1 t baking soda
1/2 t salt
1 t cinnamon
1/2 t each ground cloves and nutmeg (nutmeg can be found in Medan)
3 C finely shredded carrot
1 C cooking oil
4 eggs
1 t vanilla

Optional:

3/4 C raisins
3/4 C chopped nuts
lemon rind/zest to taste

Directions:

Combine all dry ingredients.
Add carrots, oil, eggs, vanilla, and mix well.
Mix in raisins and nuts (optional), and pour into greased and floured 13x9x2 inch pan.
Bake at 350°F for 30-40 minutes, until knife/toothpick inserted comes out clean.
